You can't. There is a bug which causes the game to freeze and Naughty Dog do not have any plans to release a fix.

There is no bug I have completed the game and there was no freezing in the whole game

Some but not all PS3 freeze after sink or swim. It happened to me. I deleted the game file (N.B. Not your save game) and then restarted the game. I was then able to complete the level.

My game had issues with sink or swim, on PS3 version. The audio starts getting all glitchy right as the pirate shoots out the window, and as Drake jumps off the boat the screen goes black and freezes instead of playing the cutscenes.
