I have done this quest on the PC but never on the PS3. You might not be going to the right jewlery box. If you see any others try those. Thats all I can say thats all I did. Hope it helps.
The shrine of Sanguine in the "Daedra shrine" questline can cause a bug with the thieves guild quests that causes the countess to sit in the dining room all night, therefor the ring does'nt get put in the jewelery box because she is still wearing it. Or occasionally she goes to bed late, usually 2 - 3am this also cause her not to put the ring in the jewelery box. To fix this simply stand outside the castle, use wait untill sometime between midnight and 2am. Then enter the castle and go to the countess' room. The ring should now be in the jewelery box. This worked for me anyway. I hope it solves your problem too.
Note: between the 15th and 17th of any month the countess travels through cyrodil. So don't attempt the quest on or in between those dates.
Simply do it before any other daedric quests. Make sure to not do it at 15-17th of any months, she will be gone. Make sure to to wait until midnight outside. Then go to her room. It should be in the box.
