At one of the shops where you buy stuff go to buy and then in the corner you'll see buy/sell for PS3 press r1 or r2

Whenever your in the inventory at a vendor, make sure you press square (for PS3 - X for 360) to switch to the "sell" menu - then press L1/R1 or shoulder buttons on 360 to toggle between suplies/junk and ammo.
