One thing I forgot:
To view how many eggs you have collected press select (or which ever button it is for you) so it comes up with the map then, the map has buttons around it e.g press Square for the list of objectives.
You should see an option for Progress (or something similar to that)

The dragon eggs you find around the game and to change when you press Start (main menu) click on Unlockables then choose character (or something like that but not character viewer!) if you have collected all Ember eggs (pink with White flowers which is set 3) or all Flame eggs (red with orange flames around it or set 4) Then you can choose the character but you have to have collected all their eggs!
