To steal your opponents finisher, you must be playing with a CLEAN superstar, if you play as a dirty superstar, he will just perform a low blow, or power of the punch, or something along those lines.

Ok, you have your clean superstar, and you should do high flying moves, and taunts and such, with a very charismatic superstar to get your finisher quicker. You must have one stored finisher, AND a flashing momentum bar, and press L2 and L1 at the same time. This will steal your opponents finisher and make the commentators go ape.
