Nope, it would just give options on how you personalize your victory after every match.
No it doesn't, but depending on the opponent you may get beaten up.
The only affect this really has takes place the week after.
Sometimes the wrestler will be in the locker room and might say something about you attacking him or attempting to shake your hand.
This only happens sometimes.
When you taunt, nothing else happens.
Taunt:
The week later, if the opponent was opposite of your affinity (face/heel) then he will get angry with you backstage, stating that you think you're hot stuff.
Then he'll get his buddy to help him beat you down back stage.
If he's the same as you, nothing will happen.

Attack:
If he's opposite of you (if you're face, he's heel) he'll get angry with you backstage and either re-challenge you, or try to attack you.
If he's the same as you, it'll depend on if it's going to make a change in their own face/heel rating... but he might turn on you... or he might just talk crap about you backstage.
Also if he's very high in SP (or if he's Goldberg... which is a knock at his NO SELL/NO JOBBING technique in the ring...) he won't let you attack him after the match. Instead he'll beat YOU down, and then you won't get ANY response the following week.

Respect:
If he's the opposite of you, and is LOWER in SP from you, he'll reject your hand. Then the following week will challenge you again. Do the same thing, and he'll ask you if you really DO respect him. Then you can make a REAL enemy if you say no.
If he's the opposite of you, and is OVER you in SP... he'll accept the hand, but treat you like crap backstage anyway. Then you can either challenge him to fight backstage, or you can do nothing about his attitude, and lose SP.
If he's the same as you, he'll take you hand and you will have him backstage the following week telling you that he respects your ability and would like to get in the ring with you again some time. (You should gain SP from this.)
