You don't...you can play as 1, a clone pilot, or two, a clone marine, same thing for the rebels and everything else.

You can't play as a Jedi or a Sith on space battles. The best thing you can get is the sniper pistol, though I am not sure if that is the correct name.

You cannot play as a hero on space battles, you could only be a pilot or a marine

You can't play as the jedi on space battles but if you go to 'instant action' on either single player or splitscreen you can play as these characters:
Map: endor
Game type: hunt
Characters: ewoks.vs. Snipers(stormtrooper)
Map: Geonosis
Game type: hunt
Characters: geonosians.vs. Snipers(clones)
Map: hoth
Game type: hunt
Characters: wampas.vs. Rebels
Map:kashyyk
Gametype: hunt
Characters: wookies.vs. Magnaguards
Map:mos eisley
Gametype: hunt
Chracaters: jawas.vs. Sand people
Map:mos eisley
Gametype: assault
Characters:heroes(jedi).vs. Villains(sith)

You can't play as Jedi/Sith in space battles. Only Marines and Pilots.
