You switch your main weapon to the fusion cutter, and slice in like an engineer does to a tank. There's little point in this, because the pilot is likely to take off before you finish cutting, and if there is no pilot then you can just get into the ship like you would one of your own.
I don't think you can slice into enemy transports though.
The fusion cutter can also be used to repair health/ammo droids, sabotaged ships, and things like the shield generator, auto-turret mainframe, life support, and engines in your ship.

When it says hack an enemy ship, it really means to some "chaos". Take one of your fighter ships (preferrably a heavely armored or a really fast ship) and fly into the enemy hangar bay on their main ship. Go into one of the two doors located in the hangar. In their will be several doors leading to several rooms. One of them is the engines, one the shields, and one the life support system. In the main room you will come into, the big tower looking thing in the middle of the room is the auto-turret defense system. Destroy that as well. Hope it helps.

You can slice into enemy ships and other vehicles. Just switch your weapon to your fusion cutter.
