How do I beat the level called Drunken barkeep without having to fight and not get drowned at the same time?

Okay, look at the first part exactly when he comes in the pool and the game starts for you to fight him, grab him and dunk him, and as soon as he is spitting water out of his mouth do adrenaline on him.
Keep doing that until the first 2 minutes or so and then he gets tough after that so try your best to slap the joystic towards him as much as you can when you think he is vulnerable (doesn't have his guard on)and that is how you beat him.
P.S. When you go into the elevator as soon as you have beat the Drunken Barkeep a guy will pull Chi away from you and ask you to fight him the easiest way to beat him is by grabbing him and smashing his head on stuff.
