How do I use my fist? I read that you could punch zombies if you don't have anything equipped.

You can't just use your fist in RE4, what you read was a lie. The only punching attack I'm aware of is the Thrust Punch Wesker has in the Mercenaries when you Up-Stun an enemy (Shooting them in the head).
