To do some of the more outrageous dunks in slam dunk contests you have to hold L1 or R1 when doing gathers and so forth. To do mad rotational dunks you must rotate the left analog stick really quick. When in a game, you just need to be using a player with excellent dunking ability such as Amare Stoudemire or LeBron James.
