You have to keep changing until you get a black guy or a white guy and the right career so it will take a long time because you can't change the color of his skin manuly.

If your already in Superstar mode, you can't change your player's skin colour. If your choosing parents, just keep choosing until you find someone that has the skin colour you want. If the guy that's there is the perfect skin colour but not the right position that you want, don't worry about it because you get to choose your position regardless.
