Try looking on the highways. Those highways or major streets ALWAYS have a big truck with a trailer attached coming through them. Alternatively, you could look near construction yards, or even the truck yard just west of where Catalina's place is.

When driving from Santa Maria beach, take the southernmost bridge going west. Go PAST Flint Intersection, staying on the same road and there will be a place on the right where you will see one of those red things that you walk into to start a mission. It will start the trucking missions. You will get a random truck and trailer. Don't worry about the mission if you just want the truck.

Find a truck driving around (linerunner, roadtrain, tanker) then you can find trailers to connect to in: the docks in San Fierro, the truck stop just south-east of the airstrip you buy, the logging camp in Angel Pine, next to Unity Station under the highway and just east of Unity Station.
