How do I defeat the Hydra???

First, knock out both the smaller hydras and then jump up the boxes besides them and jump to the platform that has a hok on the lower side. Doing this will completely immobilize them.
Next, climb up the net and you will start to face the mother hydra (BIG HEAD).
If the mother screams, press L1 to block, else you will fall off and reach the place with the altar and the two chests and will have to climb back up.
If the hydra bites down on the edge of the platform, just run to it and keep using plume of prometheus (square, square, triangle) and posiedon's rage (L2).
If the hydra smacks one side of the platform with the side of it's face, just roll away and use plume of prometheus.
Once the minigame appears, just follow the on screen instructions and you'll do fine...
