Once you have confirmed a z point on a character in dragon arena is it possible to undo it or can you start all over with the character without erasing the others and what you've unlocked

The z-point remains the same and you cannot change it unless you rest your character.
No you can't undo a Z -Point unless you restart the character, but that will take all his/hers Z-Points away...
Unfortunately,...once a "Z Point" has been "Awarded" to a specific attribute,...it's there for good. The ONLY way to remove it, is to erase your character completely.
