How on earth do you win a race without crashing!? It is so hard! Can someone please give me some tips!?

A definite perfect race killer for me was driving on the opposite side of the road. Try to stay on the same side as much as possible. And don't use boost. I found out that most of the time, the CPU racers want to keep up with you to give you more competition. The only exception is if they're way ahead of you. Then, they couldn't care less. There's my tips, now go get 'em!!!
