If your wanted level gets really high their is a simple thing to do. GO to the montain in the far west of san andreas. Once at the top activate the "floating cars" cheat. Make sure that you are in a car (not a motorbike,bus or lorry) and drive off the side of the cliff where the river is (sorry I can't remember which). When you hit the water the cops will stupidly drown but the chopper might be still chasing you. To destroy it drive along until the gorge opens up to reveal a lake. Get out of the car and swim under the cliff and stay their until it dissapears ( the infinate lung capacity cheat is very useful here!
