Beat Legends mode with Zhang Fei once. After that go to Zhang Fei at Lengends mode again. But this time it will say default character, other chracter and view ending.

Choose other characters. Now you can pick anyone to do Zhang Fei's mission. I would pick Lu Bu if I were you. when Xiahou Dun appears go to Defense mode (L1), and start moving side to side.

Eventually Xiahou Dun will request a duel from you. If you have Lu Bu's 3rd weapon this should be very easy. If you don't have it is going to take some time. Originally you get 204 weapon experience,but when you defeat him in a duel it wil give you 408 weapon experience.

Do this with the rest of the bosses and you should get about 5000 weapon expreince altogether.
