The best way to KO a dude is to use a hard grapple. Hold L1 and press "X", if you grab them, press UP Triangle. another way to infict some major damage, is to get close to the sidelines of the fight. If your near a wall, or table, or anything grapple your opponent and press x and whatever direction you want to throw them in. If your close enough, they slam against the wall. use a hard grapple and press box or triangle to nail them.

PS for lots of money, make sure that you use your blazing move once per fight. It racks up the points and the cash.
