I only get female chocobos when I mate so I can't get the gold chocobo..

There really isnt anything that can help you.

The gender is random so the anything possible is to keep trying.

It took me 2 days to get the gold chocobo.

Catch a few chocobos them before you put them in your stable save, then if you don't get what you want reset with the L1,L2,R1,R2,select, start buttons then keep doing that until you get what you want.

It does happen I mean you can't decide what gender your chocobo is going to be.

You'll just have to keep breeding until you get a male, it's the only way.

All these people telling you it's totally random are complete morons. If you save your game at a specific point, each time you load at that point you will -almost- always get the same color and gender of chocobo - it's like a weighted dice roll that has a high chance of landing on a specific face based on where that weight is at that given time. That said, you need to move the games progress ticker a point or two to change the "probability" of getting a female/different colored chocobo. The fastest way to do this is fighting a few battles, try 15 battle to start, that's usually good for me. (this ALSO is how you quickly get chocobos who have just bred or just been born ready to breed again)
