How do I unlock animals in a challenge game?

I know that it goes by how many stars you have, but, for example when I got a photo challenge in my first game to get a photo of an ibex resting in a stable, I couldn't unlock the ibex even though I had a 5 star zoo!!! So I decided to start a new game, much as I hated to, and now I have a ibex but have a different challenge of getting a photo of a gemsbok. I had a gemsbok in my last game, but can't unlock it now. Please help me...I'd hate to start another new game!!

Hmm, well. It says you need a zoo FAME rating. Are there different kind of ratings? Thats all I have though. :| Thats really weird.
