To ride the ride you need to click on the ride. Not the actual cart but the track or front booth. Then when it opens there will be a picture of the ride or car on the tracks. Double click on it to ride it. When it opens to the ride use the bottom right thing to toggle between cars and rides.

You need to click on the coaster then double click onthe train on the bottom right corner.
