First click on a guest, a window will Pop Up showing you where he's walking, what he is doing, what he holds in his hands, what are his thoughts etc...

In this window, when it initially pops up there are some buttons on the left side... The first one is the Pincer, with which you can pick them up and change their location, the second button is the one which looks like a tag (much similar to a name tag, the kind of you see on an Airport) just click on it and another dialogue box pops open... Enter any name you want and bingo...

You can also change the names of you rides and Mechanics, handymen, entertainers by clicking onto the same button...

Entering some special names unlock some cheats which you can find out in the cheats section.
