After you get the logs (by punching trees,) press E to open your inventory. You'll see four squares that look like inventory slots up near your character. Place your stack of logs (or just 1 log) in any one of those slots. You'll see some planks on the right. Shift-click on them to add them to your inventory.

Now, click on the stack of planks to pick it up, and, while holding the stack, right-click once on each of your crafting squares. There should now be a workbench in the right-hand slot. Shift-click on it to add it to your inventory.

After ensuring that it's in one of the bottom 9 slots in your inventory, press E again to exit your inventory and go back to the game.

Now, use the scroll wheel (or the number keys) to choose the crafting table, and right-click on the ground to place it. You may now craft more complex recipes. Congratulations. (right-click on the crafting table to use it.)
