There should be a little thermometer thing on the side of your mill, if you press that then it gives you different options for flour.
You have to press the little circle with the picture of the wheat. Then it will show up with selection of flours you can make. Press on the one you want.
There should be a little thing with a really tiny picture sticking out of it of wheat click that and choose what you want to make flour out of
