In between while driving Simply press F4. Go to advance time. Advance the clock by any amount. (make it reasonably human as the cops will keenly go through you're driver's log). Heh this is also a useful way to get out of roadblocks a intersections. Allowing to blaze away.

However if a hotel's nearby just drive up there and advance time from there. A charge will be necessary (for you're room).
A service station will also help you do the same.
Advancing time at a hotel is entered diffrently in the log. Also makes gameplay more realistic.

I advance time by 12 hours and after a while it doesn't work because even after I advance time it still says I am tired and need to pull over for some rest. Any other ideas?
