I've written this in point form as it would depend what phase you're at (1st boss fight only)
1st phase (on ground floor): Use the grapple on the purple clouds until there is none, then grapple Bellum & whack his eye.
2nd phase (2nd & 3rd floors): Shoot the eyes on his tentacles.
3rd phase (Ground Floor): Use the Phantom Sphere (draw an hourglass - Bellum needs to be near you when you do this for the best efficiency) And whack his eye.
The other 2 boss fights are self-explanatory.
