Once I have defeated all the shadow minions and the credits had played at the end of the game what else can I do to have fun on it?

Try leveling up and collect everything if you've allready done this sent the game back and exchange it for something else.
You can level up like crazy, upgade your butterfly and mushroom containers, and start a new game. Or trade the game in at Game Stop for a new one.
