There would be no signs, really. Only one you could get is if you were to go to someone that could tell you how happy your Pokemon is. If their happiness is high enough, it'll be close to evolving.

There is a lady in goldenrod in the house near the bike shop who will tell you if your pokemon loves you. Give your eevee lots of power up items like protein, calcium, carbos, ect...(you can buy them at the dept. store in goldenrod for 9800.) Also be sure to train eevee only in the day if you want espeon because at night he'll evolve into the dark type umbreon.
