EV stands for effort values, and they're one of the three kinds of hidden values in pokemon. The other two are individual and hex values. Every time your Pokemon defeats another one, some EV's (1-3) are given to your pokemon. For example, a geodude was defeated, so your Pokemon gets one defense EV, because geodude is good at defense, but only one because it hasn't evolved yet. There are 6 kinds of EV, one per stat. Once your Pokemon have gained 4 EV's in one stat, that stat goes up by 1 point over normal.
So, for example, if your Pokemon defeats 4 geodudes, it gets a stat change like this: 32 to 35 instead of this: 32 to 34.
The max EV's that can be gained by a Pokemon are 510, and only 255 per stat.

For example. I decided to EV train my Alakazam last night w/ Special Attack. I killed 50 Alakazams who give 3 in SpA. Then, when i leveled him, i got 31 in SpA
