Can someone accurately and specifically explain what EV training is? I would appreciate a how to example.

EV Training is when a Pokemon is being trained solely for the purpose of raising it's EVs, or Effort Value. Effort Points can be earned through fighting certain types of Pokemon that will raise your pokemon's Effort Value.
The reason EVs are so important is because they boost your pokemon's stats. That's the reason why there's a significantly large difference in stats when you look at a level 100 Pokemon that had been trained against other Pokemon, and a level 100 that had been continuously fed Rare Candies.
Every Pokemon gets a total of 255 EVs in every area, it's base stats are then added on to determine it's total stats. It's all pretty complicated, but there's a good list on Serebii.net that determines the Effort Points of every Pokemon you can face.
