Here are some tips to make a Pokemon's Happiness grow:

1. Have it be first in your party.
2. Battle with it.
3. Feed it a lot of poffins.
4. When it gets hurt in battle, heal it immediately.
5. Attach an item to it to make it more friendly towards you.

Healing a pokemon does not affect happiness, however fainting does.

That's why you need to heal it.

Try walking around with your Pokemon a lot. I did last night struggling to tweak in Jubilife City with the bicycle.
