Can anyone tell me how to get evee's new evolutions? (leafeon, glaceon, etc.)

You get them by evolving them near special rocks that can be found at the
Eterna Forest an on Route 217.

You get glaceon by levelling up an evee by the rock on route 217
You can get a leafeon by leveling an evee up at the rock in eterna forest

As far as I can remember you evolve eevee near the special rocks. For leafeon go to Eterna Forest near the rock in the north west part of the forest covered with moss. And for Glaceon go to Snowpoint and then go down to that long stretch of snow at the north east of it, to find a rock covered with ice.
