What Pokemon do I have to put into the daycare to get a male ralts so I can evolve it into a gallade or does one of the Pokemon need to have a certain item

Well, you don't do that.
You give a Shiny Stone to a male Kirlia to get a Gallade.

Put Ditto and one of the Ralts evolution chains in with Ditto, then hope to get a Male Ralts. When you get a Male one, raise it to Level 20 to a Kirlia, then use the Awakening Stone.
