With all 26 Unown, and after you've obtained the National Pokedex [which is obtained from Professor Oak in Professor Rowan's lab by seeing all 150 Pokemon in the Sinnoh Pokedex], you are able to catch two more Unown, of the symbols ? And !. To catch these, go onto Route 214 and go in the cave to the northwest of this route. Go all the way to the left and go in the cave. Run around and you're bound to see both these pokemon.
That's pretty much all that can be done after you've captured all the Unown. Just some decent accomplishment to keep in hand, I suppose. Nothing major, really.

Two things:
1) The ruin manic finshes digginf out his cave, and you become able to catch Hippopotas,
2) You can entrance to a room with rare items, and the following unown ? And unown !.

Nothing much really happens when you catch all of the unowns, except that the Ruin guy finishes digging through his cave, and he comes out the back of the cave. After he finishes digging, you can go in, and catch a hippotas Pokemon, and get access to the two secret unowns. That is all.

In comment to tricky14's comment, ya can catch hippopotas before y catch a single unown. I know, I did this. Took me forever, but I caught two hippos in that little area of cave. Thats all, thx
