How or when do I get past the dog stage... Already sucessfully cared for more than 200 animals, extended to the limits, bought all there is to buy, and have profit of more than 50 000. When so I get past this stage to get to the horses?

You have to look after animals for 10 days, all the needs below 25% and health above 50% but you also have to defeat having two animals collected for the prevention of cruelty to animals ;)
