I you wanna know how to do special shots, you go in Challenges and select the Special Shots section(you have to complete all of the Pracice section to unlock it, I think)

you don't have to unlock the special shot just learn it on the practice mode

It depends on the character that you choose, but if you want to know them,go to challenges and then press special shot.
