You have to unlock them. Red sprites are the animal feeding and shipping team so you can unlock them while working on your farm.
Here's what I know so far
Red Ribbon: have 10 adult cows and sheep
Wooly: Ship 300 animal products
Laine: Ship 500 animal products
: Ship 100 animal products
Betty: Shear sheep 100x with the touch glove
: Shear sheep 300x with the touch glove
: Shear sheep 700x with the touch glove
Mick : have 10 chickens or ducks
Woohoo: have 20 chickend or ducks
Sue: Milk a cow 100x with TG
: Milk a cow 300x with TG
: Milk a cow 700x with TG
