How do you change your vivosaur when you're not in combat

You can change your team any time by finding a VVM, tapping it and choose "Use VVM" when the choice box comes up.
Go find a VMM and press a then click on your team name then click edit then choose your vivosaurs
Once you get the VVM you can put them in there.
