Sorry, but when the game gives you your eye colour at the beginning of the game at the start, you cannot change it.
The only way (if you were extremely desperate) would be to start again with a new character and try and say different things to Kapp'n. This should influence the eye colour.
I've admittedly never done this myself, but hey, it should work!

I remember going to a website (I don't remember it's name) and finding how different answers influence your looks and it even shows a diagram for it it's from freewebs thats all I remember. I hope this helps.
