You have to beat all 4 of the doors animal leaders twice to get all 4 pieces of the pig head. Go check which one your missing and beat him. Then you'll have all four and can go race the pig. Hope this helped.

Beat which ever animal boss you didn't beat the second time. That's the only way to get the last piece. Hope this helped.
