If you have a pretty fast car, but can't get around an opponent just slowly accelerate into one of their back wheels. Once you've made contact, FLOOR IT! If you hit their right wheel it makes them turn left and hit the left wheel they will turn right. So be careful you don't want to loose precious seconds.
