You can't add the King's Guard to your guild because, eventually, the King's Guard is who you will have to fight. This is a pretty difficult step in the game. Basically, you have to go to the Kingdom section and start tapping people until you find someone you haven't met yet. Then you have to meet them and find out if they are a knight (after "Greeting" them, go to the quest book and look at the friendship page and see what their title is). If not, you just have to keep meeting people until you find one which may take several Sim days. Once you find a knight you need to talk to them enough to become sincere friends and then invite them to join your guild.
Most of the knights I have met are "good" so if you have an evil alignment you might have a hard time recruiting knights. You can change your alignment by praying/donating to the church. I have also heard that if you give someone a love potion they will join your guild even if your alignment isn't the same.
