Personality Effects?
I've read that personality influences different parts of the Sims and how they react to things.
So far, all I can tell is that they animate differently while idle, or going to the Wardrobe.
Is there any hobby or career that gets a boost or a penalty from the Sim's personality?
If so, what are all the different effects?

Sims don't really have a Personality in freeplay. If you want personality than I'd recommend Sims 3 or Sims 4 as those have sims with a lot more personality.
