How can I pause the game? I don't have time to go back to it for every notification. So when I go back a day later, all of their needs are red. And I obviously have to spend time making them all green. Thanks!!!

Unfortunately, there's no way you can possibly pause the game. The game is set in real time, which means that the game time keeps going even if your ipad turns off. But I found that if you garden or bake something for an alotted time until you're able to go back and play, their needs don't decline. I had one of my Sims garden something for one whole day (the veggie that takes 1 day to finish) and when it was finished, it's needs were still green and full!
I don't know about pausing, but if I know I won't be playing for a while, I will make my Sims garden. Their needs don't go down when they are gardening, so when I return, their needs are still green and I get the simoleans from what they grew.
I haven't found a way to do that but I estimate how long I will be gone and get them to plant crops that take that long. Then I will get some cash when I get back and they will still be all in the green.
You can make them do an action that takes a long time like having a deep sleep. It works for me!
I don't even bother about that, I just use cup cakes. I know, I know, they cost 5LP each one, and that would cost heaps. Except, I have the max amount of Simoleans and LP's, and so can you. Here's what you do.
Open up Sims Freeplay and go to The Town Map. Click on the purple store button. BEFORE IT FINISHES LOADING, CLICK HOME BUTTON. Wait 10-15 seconds and then open Sims Freeplay again. Quickly click cancel. Then reopen the store and everything should be for $$0.00! Then you can buy as much as you want and never have to worry again!
Warning! WARNING! WARNING! WARNING! WARNING!
It may not work the first time, you may have to try again later. It usually doesn't work twice in a row for me. It HAS to connect to the store for it to work, so if it failed here first time, wait half an hour and try again.
If it doesn't work by the fourth time, you must be doing it wrong.

Have them go to the night club and have a drink. It replenishes everything
