They are anywhere. I found mine under trees in an are with dirt or snow

If you want lots of mushrooms just make and use a nether reactors.

Swamps and grassy areas in the shade you will not usually find them in the sun unless under a tree

You can go to nether for a lot of them . You just need 10 obsidian and a flint and steel
Place 2 of them side by side then 2 dirt block adjacent to them (DOOD)then put 3 obsidian over each dirt block
Then again dirt over obsidian complete the rectangle using leftover obsidian. Ignite it using flint and steel
You're ready to go to nether for red and brown mushrooms
