You can't get unlimited health, unless you create a creative game. When you make a game, it gives you a choice between survival and creative.

You can use an inventory editor to set your health really high.

You can not get unlimited health for Minecraft PE for iPad/iPhone platforms, but can be available using PocketInvEditor Pro for Android platforms on the Google Play Store.
