What is meant by Cooldown period when you buy a two day shield ?
What is meant by the one week Cooldown when you buy a shield ?? Does this mean that you can't be attacked ?

No the cool down is the amount of time you have to wait before using it again

A cooldown period is meant so you can't keep buying shields over and over when they run out. So if you buy a 1 day Shield the cooldown period may be 3 days. Meaning, you cannot buy another 1 day shield until the cool down period is over (3 days) .
They do this so you don't constantly have an active Shield, so everyone has a chance to be raided at one point.
There is a mod you can use to get SO much Elixir and Gold you wont even need Gems
