If you die and start over at a checkpoint go back and recollect the fruits you had previously collected.

Tap 'Quick Restart' in the corner of the screen to start the game again and not lose a life when you know you are going to fail your run.

You are never going to get the bounce record the first time round when you play a level in this platform arcade so use the first few playthroughs to learn the level before attempting to break it's record.
