You fight Zant in 6 phases, each stage mimicking an area you've fought in before.
1) Forest Temple - Use your Shield to block his attacks, the Gale Boomerang to stun him and your Sword to hurt him.
2) Goron Mines - Use your Shield to block his attacks, the Iron Boots to balance yourself and your Sword to damage him after he attacks.
3) Lakebed Temple - Put on the Zora Armor, Iron Boots and use your Clawshot on Zant after he attacks to slice away.
4) Forest Temple - Roll into the pillar that he's standing on twice to knock him down, then fight.
5) Snowpeak Ruins - Just keep hittig him with the Ball & Chain.
6) Duel - Dodge or block his attacks with your Shield and when he's done just cut him up!

This is a six part battle.
First, you fight him in the Forest Temple boss room. Draw him to you with your boomerang, then hack away. Repeat as needed.
Second, you find yourself where you fought for the bow in the Goron Mines. Use your Iron Boots to steady yourself and your shield to protect yourself, then take them off and run to him so you can beat him. Repeat.
Next, you're at the Lakebed Temple boss room. Iron Boot yourself to the bottom, jump to the side to avoid his spell, and clawshot him to you. Hack away. When he comes back, there'll be four heads for him to hide in...Be careful, find him, and repeat.
Back in the Forest Temple now, but this time where you first got the boomerang. I don't think you can use the boomerang this battle though, so roll into the pillar Zant is on (while avoiding his projectiles) twice to get him on the ground, and stab him. Repeat as necessary.
You remember this room, don't you? Yeah, Yeta and Yeto's bedroom. A little embarrassing, but Zant doesn't mind, so you don't have the time nor the luxury. Run away from him, then when he falls hit his foot with the Ball and Chain. He'll swiftly shrink and hop around; hit him quick, or you'll have to do it again. After three or so hits, he'll teleport you to the final showdown between he and you.
Now you're just outside Hyrule Castle Town's south exit. You're limited by those annoying magic walls, the same as guard Hyrule Castle. Do not touch the walls; you will be hurt. Zant has three attacks: a manic sword-slinger, a twister, and a normal attack. You can only hurt him when he does the latter; either of the first two make him hard/impossible to hit. Use your shield to protect yourself and don't back yourself into a corner.
Once you beat him, he'll take you back to the Palace. He'll tell you a sad story (or was that before the battle?) and then you can do what you want (specifically--get treasure, especially Pieces of Heart).

You can do it.
